They’re both cute and fluffy, they are close cousins (literally!) and part of the camel family, known as Camelidae. But the similarities end there. Here are six distinguishing features to be able to instantly differentiate. Plus, impress your friends with your know-how.

1. Overall Size
Alpacas are significantly smaller than Llamas. A full-grown llama can be almost double in size to an adult alpaca. Average adult Alpaca is about 125 lbs compared to the adult Llama at 250 lbs.
2. Ear Shape
Llamas generally have longer or banana-sized ears. While alpacas have shorter, more rounded ears.
3. Face Shape
Alpacas have small, blunt faces that can be described as having a “smooshed” look. Llamas have more of an elongated face.
4. Disposition
Llamas are described to be confident and brave, even having a bit of an attitude sometimes. They are more prone to spitting in defiance or when they feel threatened. Alpacas on the other hand are known to be very shy and gentle and find comfort in a herd.
5. Hair/Fiber
Alpaca fur is often shaggier and softer. It is frequently used in clothing because of its soft hand, warm yet lightweight, and hyper-allergenic qualities. Llama fur is coarser and can be used to produce rougher hewn things like rugs and rope.
6. Purpose
Because of all the differences listed above, their historical purposes for humans diverge. Llamas are commonly used as pack animals, since they are bigger and can carry a generous amount of weight. Alpacas soft fur coats have been used in fiber production for thousands of years. Apparently, clothing made with it comes without the itchiness of wool. Sign me up!

Details: Austin, Texas-based country singer-songwriter John Arthur Martinez will perform in Whitefish at Haskill Creek Farms in late July as part of a North Valley Music School (NVMS) fundraising event.
The show, which is sponsored by Don K Subaru, is intended to drum up support for North Valley Music School’s ongoing “Be Instrumental” capital campaign to raise money for a new Whitefish music school and campus. The school has raised $4.2 million to date, and is trying to raise the final $2.3 million this year, according to a press release announcing the community concert. In the past, NVMS leadership has described how the organization has outgrown its Spokane Avenue location, and the future facility at Smith Fields is intended to provide more space overall for the school, and to improve the quality of performance and instruction spaces available. Discussions and planning for a new home for NVMS have been ongoing for more than a decade.
Billed as a “family-friendly music event,” attendees will also be able to purchase items from the Haskill Creek Farm Store, wine from Water’s Edge Winery, food from Rebel Roots, and ice cream from Farm to Table, and the funds raised will go to support the “Be Instrumental,” campaign. In a press release about the concert, NVMS also credits Singer & Simpson Productions with helping to make the event possible.

Try out this recipe for a delightful way to mix up your taco game. This twist on the traditional, features grilled salmon with heat from red chili powder by Boonville Barn Collective. Then add some tang from some quick-made slaw. Make it with either corn or flour tortillas, but don’t forget to top it with fresh cilantro and creamy avocado slices.
Ingredients:
- 2 Salmon Filets
- ½ C Red Cabbage
- ½ C Green Cabbage
- ½ Red Onion
- Green Onion
- 1 Carrot
- ½ C Apple Cider Vinegar
- 1 TB Maple Syrup
- 1 TB Dijon
- 2 tsp Celery Seed
- 1 tsp Piment d’Ville chili powder by Boonville Barn Collective
- 1 tsp Ground Yellow Mustard
- Pinch of Salt
- Cilantro
- Avocado
- Corn Tortillas
Instructions:
1. Thinly slice cabbage, red onion and green onion, grate the carrot and mix together in a small bowl.
2. In a separate bowl, combine apple cider vinegar, maple syrup, dijon, celery seed, red chili powder, mustard and salt. Combine the dressing ingredients with the vegetables and toss gently.
3. Season salmon with salt and pepper and a drizzle of olive oil. Grill 3 minutes on each side over medium-high heat.
4. Gently heat 4 tortillas, split each piece of salmon in half lengthwise and place in each tortilla. Top with vegetable mix and garnish with avocado and cilantro.
5. Enjoy!

The tradition of Jerk Spiced Chicken is commonly associated with Jamaica, but also broadly known through the Caribbean. It’s an unforgettable combination of heat and spices to enliven- often chicken, but can be used on different meats. You could even try a Vegetarian version using jackfruit. Our spice blend made in-house, features allspice, thyme, and cayenne as well as warming cinnamon and nutmeg.
Ingredients:
- 2 Chicken Breasts
- Jerk Seasoning
- 1 C Basmati Rice
- 1 Red Onion
- 1 Mango
- 1 Red Bell Pepper
- 2 Garlic Cloves
- 14 oz can Black Beans
- Green Onion
- Cilantro
- Citrus Dressing (recipe below)
Instructions:
1. Rice
Start by rinsing rice with cold water and cook either in a rice cooker or on the stove top. The typical ratio is 1.5 Water to 1 Rice.
2. Vegetables
While the rice cooks, it is time to prep the vegetables. Dice red onion & red bell pepper into ¼” pieces and saute over medium heat for 3 minutes. Add sliced garlic, mango and black beans and continue to cook for 2 minutes.
3. Chicken
While the vegetables are sauteing, slice each chicken breast in half lengthwise and generously rub with Haskill Creek Farms Jerk Seasoning blend. Grill on medium high heat for 3 minutes and flip over. Continue cooking on the other side for 3 minutes. Flip one last time and cook 2 minutes longer.
For the Citrus dressing, add all of the ingredients except oil to a blender and pulse 2-3 times. Begin adding oil in a slow and steady drizzle and blend on high for 1 minute. The dressing can be made a day or two ahead of time.

1 TB Garlic
1 TB Shallot
1 TB Ginger
1 C Olive Oil
1 tsp Salt
4. To Assemble
Place a scoop of rice in a bowl. Add vegetable mixture around the rice and top with sliced grilled chicken. Garnish with green onions and cilantro.

What makes a marmalade marmalade? The answer lies within the type of fruit used. While a marmalade is prepared similarly to jam by simmering down fruits and leaving bits remaining. The main difference is that marmalade is specifically made from citrus- usually from bitter oranges. This lends a particularly enticing flavor to savory dishes.
For this recipe, we used Boonville Citrus & Chile Marmalade. We amped it up with smoked bacon, cajun spices, and sweet maple syrup. Topped upon a crispy slice of sourdough and co-mingled with melted brie, the flavor combination is the perfect start to any course.
Ingredients:
- Sourdough Baguette
- Brie Cheese
- Thyme
- Drizzle of Olive Oil
Bacon Marmalade:
- ½ lb. Smoked Bacon
- 2 Shallots – finely diced
- 2 Garlic Cloves
- 1 TBSP Dijon
- 1 TBSP Boonville Citrus & Chile Marmalade
- 1 TBSP Brown Sugar
- 1 TBSP Ghee
- 2 TBSP Maple Syrup
- 1 TBSP Lemon Juice
- 1 TBSP Apple Cider Vinegar
- 2 tsp Cajun Seasoning

Instructions:
1. Chop the bacon and cook over medium heat until it is mostly cooked. Drain, reserving 2 TBSP of the grease for the marmalade mixture.
2. Combine dijon, marmalade, brown sugar, maple syrup, lemon juice, vinegar, cajun spices, butter and bacon grease in a small mixing bowl and mix thoroughly.
3. Sauté the garlic and shallots over medium heat for 1-2 minutes. Add the bacon and marmalade mixture to the pan and cook for 2-3 minutes stirring frequently so it does not burn to the pan.
4. Slice the baguette on a bias and arrange on a baking sheet. Give a drizzle of olive oil and toast in a preheated oven at 425 degrees for 8 minutes.
5. Slice brie and arrange on each crostini. Bake for 2 minutes or until cheese is gently melted. Top with bacon marmalade and garnish with fresh thyme.
